Peanut butter granola

4 Aug

This recipe makes a great breakfast or snack granola – not too crunchy, so it’s great in milk as cereal or with yogurt.

In a large bowl, mix:
4 cups oatmeal
1 cups whole wheat flour
1 cup dried coconut
1/3 cup sesame seeds
1/2 cup sugar
1/2 cup peanut butter
1/2 cup water
1/2 cup oil
1/4 cup powdered milk
1 tsp cinnamon
1 tsp salt

Combine dry ingredients in a large bowl and wet ingredients in a second bowl.

Add wet ingredients to dry and mix thoroughly. Spread on a non-stick cookie sheets or cookie sheet lined with parchment paper.

Bake at 350 degrees for about 30 minutes, until golden. Cool completely, then store in airtight container. Eat plain, as cereal, over yogurt or in trail mix.
