10-minute ricotta from powdered milk

This ricotta is much cheaper than what you can buy in stores – and it tastes really good too! You can use it in lasagne, in calzones, on pizzas, or with fresh fruit and honey for a sweet snack.

2 cups prepared milk (I used powdered whole milk)
2 Tbsp vinegar
1/4 tsp salt

Combine ingredients in a glass bowl. Microwave on high for four minutes. Stir gently with a spoon to see if curds have started to form. If not, continue heating in 30 second increments until curds separate fully from whey.

Drain whey using a cone coffee filter.

Makes about 1/2 cup of ricotta.

    Save the liquid to use in breads. Adds a nice, sweet flavor.
