Jeana’s one-dish wonder

My friend Jeana has an excellent recipe for a one-dish dinner. Dee-licious!

1/2 pound ground beef
3 potatoes, cubed
1 turnips, cubed
4 carrots, sliced
1 lg onion, chopped
1 small can of corn
2-3 cloves garlic, crushed
1/4 tsp rosemary
salt
freshly ground pepper
olive oil

Optional toppings: sour cream, shredded Gouda or other cheese

Drizzle a little olive oil in the bottom of a large baking dish with a lid. Add a layer of the vegetables covering the bottom of the dish. Next add the ground beef, breaking it up over the vegetables. Add remaining vegetables, then salt, pepper and rosemary.

Cover and bake at 375° for 45 minutes to an hour, stirring every 20 minutes. When vegetables are tender, it’s ready to serve!

    By necessity, cooked on stove top with ~ 2 cups of beef broth. Shredded Gouda on top when served was a nice touch. Serves 4.
