Apple-cinnamon granola

We eat a lot of granola! I came across a recipe that called for using unsweetened fruit purée (such as applesauce) as part of the liquid. I tried it once – and it immediately became our default recipe.

For the applesauce, you can just slice up a couple apples and cook them in a saucepan with a little splash of water. Once soft, purée them with a stick blender.

In a large bowl, mix:
5 cups oatmeal
2 cups whole wheat flour
1 cup dried coconut
2/3 cup sesame seeds
2/3 cup sugar
1/3 cup semolina
1 tsp cinnamon
1/2 tsp salt

In another bowl combine and mix well:
2 1/4 cups unsweetened applesauce
1/3 cup oil

Add wet ingredients to dry and mix thoroughly. Spread on 2 non-stick cookie sheets or cookies sheets lined with parchment paper.

Bake at 250 degrees for one hour or until dry and golden. Cool completely, then store in airtight container. Eat plain, as cereal, over yogurt or in trail mix.
