Whole wheat pancakes & bissap syrup

1 egg
1/2 cup plain yogurt or lait caillé (unsweetened)
1/2 cup water
2 Tbsp oil
1 cup whole wheat flour
1 Tbsp sugar
1 Tbsp milk powder
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder

In a large bowl, sift together the flour, sugar, milk powder, cinnamon, baking soda, salt and baking powder. Make a well in the center and pour in the water, egg, lait caillé/yogurt and oil. Mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Bissap syrup:
Fill small pot with rinsed bissap flowers and add enough water to fill the pot half way. Bring to a boil for ten minutes, then remove the flowers and add sugar equal to the volume of remaining liquid. Cook again until the sugar is entirely dissolved.
