Papaya cupcakes with lemon glaze

Moist cupcakes with just a bit of papaya flavor, topped with a tart lemon glaze.

1 1/4 cups sugar
1/2 cup oil
2 eggs
1 1/2 cups mashed very ripe papaya
1/2 cup vanilla yogurt
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt

Mix sugar and oil in large bowl. Stir in eggs until well blended. Add papaya and yogurt. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Pour into greased cupcake pan, filling 3/4 full.

Bake in pre-heated oven at 350° for 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of cupcakes from pans; remove from pans and cool completely, about 2 hours, before dipping the tops in glaze.

1/3 cup lemon juice
1/3 cup sugar

Combine sugar and lemon juice in a small pan. Heat over medium, stirring occasionally until bubbly and thickened to the consistency of maple syrup.

    These look delicious. So I am preparing to move to Dakar in August and am currently trying to find out what kinds of things food wise are available there and what I might want to bring with me. So here are my first questions.

    Can you find good baking soda and baking powder? Also, can you find yeast?

    My other question is about sugar. What is available in the way of sugars? Is there brown sugar or other substitutes? Is the white sugar fine and processed or a more course grain?

    I would love to know what you use.
