Papaya, grapefruit and banana salad

This is hands down my favorite fruit salad. I made it in Abidjan, Côte d’Ivoire, about eight years ago and was very excited to make it in Senegal recently. The tartness of the grapefruit is delicious with the sweet papaya, and the acidity balanced out by the banana.

1 ripe papaya (solo is my favorite variety)
2 red grapefruit
3 bananas

Wash the papaya. Cut it in half, then scoop out the seeds. Slice into wedges, then peel with a knife. Cut into cubes and place in a large bowl.

Peel the grapefruit. Slice open each section open with a knife, then remove the pulp. Place in the bowl.

Peel and slice the bananas. Add them to the bowl, then toss gently before serving.
