Coffee banana bread

I love banana bread. I love coffee. I hate not living near a Starbucks to enjoy all their yummy fall specialties. Here’s my solution: coffee banana bread with lots of warm spices! (Recipe dedicated to Kate.)

1 1/2 cups flour
2/3 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
2 eggs, beaten
2 Tbsp melted butter
2 Tbsp milk (or light cream)
1/4 cup espresso or very strong coffee
2-3 very ripe bananas, mashed well

In a large bowl, mix dry ingredients. In a separate bowl mix remaining ingredients. Add wet to dry and stir until flour disappears – but not longer. Pour into non-stick loaf pan.

Bake in preheated oven at 350 degrees for 35 minutes or until a knife inserted in the center comes out clean. Take out of oven and remove loaf from pan. Cool completely. Store in airtight container or Ziploc. Freezes well!

    Hey Kari, I ‘know’ you through Amy Giles Gabriel. I actually emailed you a few times prior to going to Uganda as a jman. Anyways I still loving checking out your site cause you always update it. And I love your recipes. I wanted ot ask you…have you ever made this with whole wheat flour/substitue part of it at least? If you want to email back to me you can at I’m actually married now (to a jman as well…he was on my team too..sound familiar 🙂 but I obviously don’t keep up my blog as you can tell. Anyways, I look forward to making this bread 🙂

    I just put this banana bread in the oven. I can’t wait to start smelling it throughout the house. My kids are going to love it when they come home from school. I know it!
